I made dinner for myself tonight and was so proud of it I had to blog about it!!
I made something special in honor of Cinco de Mayo! I just kind of threw a bunch of things together, but this is what I came up with:

I started with a warm tortilla covered in cheese {inspired by the fantastic Cafe Rio}:

Then I added some chicken, rice and black beans:

Added a little sour cream and rolled it all up:

I'm not going to lie.... I was pretty worried that it was going to be really gross!! I didn't trust my own cooking! Ha!! But, it was fantastic and I am pretty excited there are leftovers!

I AM ... eating Cheez-It's and drinking water
I WANT ... a pair of hot pink high heels
I HAVE ... a wonderful roommate who bought me some beautiful daisies
I WISH ... losing weight was as easy as gaining it
I HATE ... that my office is in the basement
I FEAR ... that I will be in debt forever
I HEAR ... someone walking across the floor above me
I SEARCH ... for a best friend
I DON'T THINK ... life is fair sometimes
I REGRET ... eating Milano cookies and Dr Pepper for lunch yesterday
I LOVE ... driving with the windows down
I ACHE ... for something I don't think I'll ever have
I AM NOT ... the person I want to be
I DANCE ... hardly ever
I SING ... along to Glee songs and show tunes all the time
I NEVER ... use yellow fingernail polish
I RARELY ... try new foods
I CRY WHEN ... I hear certain songs or see certain movies
I AM NOT ALWAYS ... good about keeping my room clean
I HATE THAT ... I don't have lots of time/money to travel
I'M CONFUSED ABOUT ... life in general
I NEED ... more confidence
I SHOULD ... send a package to a friend today

Travel Wish

I need a vacation! Somewhere warm and sunny! Somewhere like this:

A tropical island getaway sounds so fantastic right now!! Even if I were to be all alone!! I would spend my day in a hammock, basking in the sunshine:

Or sitting on the waters edge reading a stack of wonderful books:

And a tropical vacation wouldn't be complete without some kind of yummy drink in a cool cup with a little umbrella!! Raspberry lemonade for one please:

I would wear flip flops all day long and only take them off when I go for a dip in the warm, clear ocean:

And I would wear a flower in my hair everyday:

The best part would be ending my days look out at the tropical paradise so glad that I am not in the snow:

Unfortunately... this is the closest beach to me......

The beach at the Great Salt Lake. Somehow is just doesn't have the same appeal as some of those other beaches! There is no place for me to hang my hammock and I there is no where nearby to get a drink with an umbrella! I guess I could take my flip flops though.... and wade through the snow.... and pick up pieces of sagebrush to wear in my hair instead of hibiscus flowers......

Nope.... I just don't think that will cut it!! I need a real beach! And warm, sandy, palm tree covered beach!! Hmmm, I wonder if Expedia has any kind of deals............

I am extra proud to be an American today! Osama Bin Laden is dead thanks to the hard work and efforts of so many people! I am thankful for CIA members and military leaders that had the intelligence they needed to track him down. I am extremely grateful for the special group of people that went into the compound and carried out plan of attack so well! No loss of American lives! What an amazing thing! I am grateful for former President George Bush! Lots of people hated him. So many people said we should pull out of the Middle East. But he would not give up. He continued to fight for justice for everyone who lost a loved one on September 11th and also for the safety of all of us here in this country! I think he deserves just as much credit for this day and President Obama does!

It was such a great thing to watch our country come together last night on the news! It was exciting to see everyone gathering in front of the White House so quickly, cheering and waving flags in celebration of our country's victory! I wish I could have been standing there, singing the national anthem with them! It was also wonderful to see celebrations at Ground Zero and also at a baseball game in Philadelphia! I love seeing our country come together!! "United We Stand"
